Wendy’s Gluten Free peach Cobbler

Wendy’s Peach Cobbler

(Gluten-Free, sugar Free & dairy free too)

1/3 cup of agave syrup

1 tbsp. Gluten-free all purpose flour blend (such as bob’s red mill)

1/8 tsp. of ground nutmeg

2 ½ cups of fresh peaches sliced or 1 pkg. of frozen peaches (16 oz. pkg.)

Topping

½ cup of Stevia

½ cup gluten free flour

½ tsp. baking powder

½ tsp. salt

¼ cup of dairy free spread such as earth balance (you can also use real butter)

1 small to medium egg, beaten

Ice cream, optional ( Or use Dairy Free Ice Cream)

In a bowl, combine agave, flour and nutmeg. Add peaches; stir to coat. Pour into a greased 8X8 inch square pan or 2 qt. casserole dish. For topping, combine stevia, flour, b. powder, and salt. Cut in butter and till mixture resembles crumbs. Stir in egg, spoon over peaches. Bake in a 375 degree oven for 35- 40 minutes or until filling is bubbly and topping is a little golden. (Remember that GF flour does not brown the same as regular baking). Serve hot or cold with ice cream or non-dairy topping if desired.

Yield: approx. 4 servings

Note: this recipe could be doubled easily, use a bigger pan and double everything.
